How Does Eat Stop Eat work?

When I first heard about Eat Stop Eat I thought it meant a person should take a bite of food, then put their fork down for a minute or two, and then pick their fork back up to eat their next bite of food.  That is a diet trick I have heard some people recommend.  I actually tried it once in a restaurant.  The waiter came over and asked if there was something wrong with my food because he noticed I wasn’t eating it.  But, that is isn’t what “Eat Stop Eat” is.  It is a way to lose weight without typical dieting or counting calories or carbs or fat grams or whatever the next “big” thing to count in food will be.  It is just a matter of intermittent fasting combined with normal eating.
